Talked to Eric, If she can start this Thurs, we can have her come in at II am, meet staff, see lunch, tour kitchen, do early dinner service. Friday, 7 am, work with Receiver. Sat/Sun off Monday, 7am, again with receiver. Tues,Wed, Thurs, Fri cycle her through stations (prep, butcher, pantry, hot line, pastry) We can talk with her and focus where to put her. Following week could be sushi. Then FOH?
