Jeffrey,
Just a thought...
It seems to me that a combination of a personal assistant / Chef would be an ideal addition to your staff.
Someone who travels with you everywhere and takes care of cooking in NYC and Florida, plus assists with food on the island when needed.
Then you also have the manpower needed for event cooking since the chef/assistant should be able to handle that task.
