Here's best answer I found on quora for eye color, which I copy and paste below:
Blue eyes are eyes with a relative absence of pigmentation; green I imagine is just a happy medium between blue and brown, offering some of the advantages of both. A complete absence of pigment in the eye causes red eyes (as you can see all the blood vessels). This is seen in albinos.
As an interesting aside, ninjas actually wore blue at night, not black, to exploit the fact this is the predominant colour that one can see at that time, and so they blend in better than if they had worn black as is commonly portrayed.
Also, do you ever check out steve sailor's website? He's into parsimonious (but not politically correct) accounts for issues like race differences and the like.
Here's one thing he posted on eye color, that might explain your puzzle: "Greg Cochran's theory is that just as selecting for new personality traits in wild animals that you are trying to domesticate often introduces new physical looks, the famous diversity of looks among Europeans (red and blond hair, blue, gray, and green eyes) are by-products of natural selection for new personality traits favorable to survival in Europe. Blue eyes, for example, might possibly be a by-product of selection for something like shyness."
