I found elk at one place. They would have to order it and will take 3 days. Its very expensive. 39 dollars a pound and we will have to buy a minimum of 12-14 pounds...

480$ for a meat I'm almost sure will be very similar to the bison. Very lean and flavorless when dried. I will keep looking unless you'd like to go ahaed with this.

where do you store the jerky?

That was the last of it on the table today. On way back now with ingredients for more. Didn't wanna make more without lemon grass, and needs the sweet soy as well. Found both those things at asian grocery in albuquerque. Bought enough that we won't run out again.
