Hi Sarah,

Just wanted to touch base on where I am at with things this week. I have cooked for two days for Ms Maxwell, Monday and Tuesday. I spent today getting things ready to send off to LSJ, Stew and steaks and some equipment.

At 71st we have started going through all the old plates and making room for the new plates in the kitchen. When can we expect to see the new plates? I would need your help to figure out what stays and what goes as far as what's there and maybe find new homes for a few things... some sets are missing a lot of pieces, some are kind of dated, and some are fine to still use.

Here are a few things I found that might be good to have around for snacks and dinners to switch things up a bit. You have the great eye for this stuff and know what works in the house.

To recap our conversation I thought it would be nice to go towards a classic but modern kind of feel. Eleven Madison Park, Corton, Jean Georges all do this really well.

Bernardaud has this line I thought looked interesting (the fruit dish, gravy boat, Sugar bowl and creamer)

Ice cream set for a possible lunch buffet

Slate boards (2- Small and 2-medium) for canape and snacks

Soy sauce pot but maybe not for soy but for a broth or jus that gets poured at the table

Large Glass bowl for salad (buffet or family style) Or the small ones for a small app or amuse

Mini dessert serving glass for ice creams or sorbets, or I can see them used for butter, jam and cream cheese at breakfast

This Christofle flatware also has serving size spoons and forks. I don't think the photos do it justice.

Christofle has a line called Vertigo that has some really cool looking pieces. The butter dish and water pitcher caught my eye

So that's a start. Let me know what you love/hate and I will keep looking.

Thank you Sarah

Francis

Thanks! Most of these things are great! I will resend you the links of things I like and you can help me with quantities, or we can just try and speak on the phone on Friday. I will also be back in NY this Sunday/Monday. I went into Christofle as well and really liked the Vertigo stuff. I took some photos of things that stood out to me. I'm not loving the flatware you sent, but I did see a few other sets at Christofle I really like.

I also went by 7 West 34th st and saw a few cool things and got some catalogs which I've been going through picking out some things.. will send you photos too.

How was it cooking for GM?

Ok good on the vertigo Had a feeling that flatware was questionable

I'm cool with Saturday or Monday to go through some things either on phone or in person. I'm planning on taking Sunday to do some things at home. I look forward to seeing what you've found as well. I have purchased a few canapé spoons but that's all so far.

If possible I'd love to have a few of these pieces for JEs return. Even if it's simply the slate trays and a few new things for snacks. This way he sees progress has been made.

Cooking for GM was great. She was very appreciative of what I prepared and seemed to really enjoy the food. It's nice to have someone to cook for that enjoys eating.

Do you have an ETA on the new plates?

Hey francis, are you at 71st today? I have some catalogs I can bring by of kitchen stuff to show you and thought we could go by crate and barrel to buy some of those slate boards and whatever else we see.
