They are hundreds of years old. The fermentation process takes about 4.5 =ears and only < 0.1% of soy sauce produced now use this traditional =rocess. There is no salt added and the microbes in the vats and the air =o all of the work. It's very subtle, but the taste should be completely =ifferent than any soy sauce you'd tried. ;-)
